healthy recipe idea. chicken salad. goodies galore.

Do you ever stare at your fridge and think what oh what, shall I make for lunch? Or dinner? Or any meal, really? Well, it was total luck that I stumbled on this delectable lil’ treat. Oh my golly. Delicious. Oh so simple. Filling. I swear you will want multiple helpings.

Let me introduce you to a yummy little treat that is a twist on your traditional chicken salad.

Here’s the story. My mom is visiting from out of town and we were both in need of some lunch. I stared at the fridge and eyed this new mayo I found at Whole Foods earlier this week and some cooked, diced chicken. First thought, chicken salad. But the truth is I have a hard time with any sort of chicken salad dish because of the mayonnaise flavor. Too much for me.

But, I was guilted into trying a sample at Whole Foods and I WAS SOLD. I kid you not, this stuff is amazing. Not only is it made without egg {no cholesterol}, but it truly tastes like no mayo I have ever had before.  Introductions, please.

Don’t delay. Stop by Whole Foods and get some for yourself. It will change your life. If you were never a mayo fan this might convert you and it is a healthier version to that old traditional staple.

{ingredients… i literally pulled all of these out of pantry five minutes before making. wahoo.}

  • 2 cups cooked, diced chicken
    {tip: i use precooked chix from costco}
  • 3/4 cup Just Mayo mayonnaise
  • 1 tablespoon chia seeds
  • 1 tablespoon fresh thyme, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup dried cherries
  • 1/2 cup diced celery
  • 1/4 cup Emerald glazed walnuts
  • 1 tablespoon pepper, more to taste

{mix it up}

  • Mix together diced chicken, mayonnaise, thyme and pepper
  • Add remaining ingredients and mix until well combined. If  needed, add additional mayo
  • Serve immediately or chill in the fridge

{ways to serve. ways to eat.}

  • the old fashioned way, a bowl and a fork
  • lettuce wraps
  • spread over a piece of wheat toast
  • tucked in a pita wrap
  • cracker fixins’
  • try adding some other treasures, like grapes. yum.

Nothing better than a healthy and speedy recipe to prepare. And, I promise you it will be a real crowd pleaser. Give it a try. You just might be hooked too.

    bought the mayo today and making this for the family right now! It’s in the refrigerated section at Whole Foods (where they have the dips/spreads)…thanks Jess!
